These 3 ingredient keto peanut butter cookies are about to become your best friend! These cookies are perfect for keto eating plans while allowing you to enjoy a timeless treat.
Preheat the oven to 350F and make sure the oven rack is in the center position.
In a medium-sized mixing bowl, add the peanut butter, egg, and powdered erythritol. If you have vanilla, adding ½-1 teaspoon is a nice addition but totally optional.
Mix the ingredients together until just blended.
Form the peanut butter cookie dough into small balls and put them on a parchment paper-lined baking sheet.
Gently flatten the cookie dough balls with a fork to make criss-cross lines.
Bake for 9-10 minutes until the cookies are baked through.
Let the cookies cool for 5 minutes before removing them from the baking sheet.

For a variation try chunky peanut butter or other types of nut butter like almond, sunflower, or a mixed nut butter.Natural peanut butter is recommended for keto, many brands include sugar in them and that will make the carbs too high.Powdered erythritol or monk fruit works best in the recipe, if you only have granulated we recommend cutting back on the sweetener slightly or making your own powdered sweetener by pulsing the granulated sweetener in a high powered blender.
