A healthy Greek salad with tomato, cucumber, feta, and kalamata olives makes for a great dinner side dish with chicken, or served as a meal prep lunch.
½+ cup red wine vinegar dressingstore-bought or homemade
½teaspoondried oregano
¼teaspoonfine sea salt
DRESSING
¼cupextra virgin olive oil
2tablespoonred wine vinegar
1garlic cloveminced
1teaspoonDijon mustard
½teaspoondried oregano
¼teaspoonsalt
⅛teaspoonground black pepper
Instructions
If you're making our homemade red wine vinegar dressing, combine the olive oil, red wine vinegar, garlic, Dijon mustard, dried oregano, salt, and pepper in a small bowl. Combine. If you're using bottled dressing, skip this step.
Prep the cucumber tomato salad ingredients by slicing the onions, cucumber, and green pepper. You can leave the grape tomatoes whole or if you're using regular-sized tomatoes instead, cut them into wedges.
Add the cucumbers, tomatoes, and kalamata olives to a bowl. Drizzle with the red wine vinegar dressing, dried oregano, and sea salt and combine the ingredients together. Sprinkle with feta cheese cubes before serving. Enjoy!

Sprinkling the feta over the top of the salad at the end or on the side makes it easy to serve this as a dairy-free option.
The feta can be cubed or served in large squares on top (which is the authentic Greek way).
Traditional Greek salad drizzles the salad with red wine vinegar and olive oil, our version uses red wine vinegar dressing but the traditional version can be made instead.
Other variations include mixing in cubed pre-cooked chicken, avocado, or cooked quinoa.
