An easy dairy free beef stroganoff recipe that cooks on the stove top in only 20 minutes. What's even better is this recipe is a low carb, paleo, gluten free, and keto beef stroganoff recipe too.
Melt the coconut oil in a large pan on the stovetop on medium heat
Saute the onions for 5 minutes in the coconut oil
Add the sliced mushrooms and cook 3-5 minutes until they start to soften
Stir in the salt, pepper and dijon mustard
Turn up the heat to medium high and add the shaved beef to the same pan as the vegetables. Cook for 5 minutes until the meat is cooked through. If you're using stir fry beef it could take a little longer than 5 minutes.
Turn the heat down to medium low and add the coconut milk to the beef and vegetable mixture.
Simmer 5 additional minutes until all of the ingredients are heated through. Serve and enjoy!

Prep all ingredients before you start since the recipe cooks so quickly.We used pre-sliced shaved beef but you can also slice thinly cut steak like ribeye or sirloin to make the recipe.Ground beef also makes for an inexpensive steak substitute.Do not swap tougher cuts of beef like stew meat, the recipe will be tough and not tender.Serve with vegetables, cauliflower rice, zoodles, pasta, or potatoes.
