Instructions
Preheat the oven to 350F. Line a rimmed baking sheet with parchment paper for easy clean-up.
In a medium sized mixing bowl, combine the peanut butter, egg, and sugar. If you have vanilla, adding ½-1 teaspoon is a nice yet optional addition.
LIghtly flatten the peanut butter cookie dough balls with a fork to make a criss-cross pattern.
Bake for 8-9 minutes until the cookies are baked through. Let the cookies cool for 5 minutes before removing from the baking sheet. Enjoy!
Notes
Use natural peanut butter instead
of regular peanut butter to make these cookies even healthier than they already are.
Other types of nut butters
work for this recipe like almond butter or sunflower seed butter.
Add some mini-chocolate chips
or dip half of the cookie in melted chocolate for an extra-special cookie. Or add a Hershey's Kiss on top.
