1cupcottage cheese (226 g)4% works better than low fat
1 ½tablespoontaco seasoning (12 g)or more to taste

½cupcheddar or Mexican blend (48 g)we used light Mexican blend cheese
Instructions
Blend the cottage cheese and the taco seasoning in a bowl with an immersion blender, in a blender or food processor.
Transfer the ingredients to a small bowl along with the Rotel fire roasted tomatoes and half of the cheese. Microwave for 1 minute and stir. Sprinkle the remaining cheese on top and melt for 30-40 more seconds.
Serve immediately with tortilla chips or veggie sticks. Enjoy!
Notes
An immersion blender works better than a blender or food processor for pureeing cottage cheese, but a blender still works totally fine.
If the dip is too thick for your blender, add a tiny bit of milk.
To keep the fat down we used light pre-shredded cheese. Pre-shredded cheese is more likely to clump since it adds starch to the bag. Make sure to mix the cheese well to keep it from clumping or you can shred cheese yourself.
