Home fries are packed with flavor from the roasted vegetables, but with the crisp golden exterior we've come to know and love from potatoes. This easy recipe takes less that 20 minutes to cook!
Soak diced potatoes in cool water for at least one hour (optional)
While your potatoes are soaking, dice ⅓ cup of red onion and ⅓ cup of green pepper into ½" pieces, set aside.
Preheat the air fryer to 400 F for 5 minutes.
Strain the potatoes and blot dry with a paper towel.
Toss the potatoes, oil, and seasoning together in a dry bowl.
Cook potatoes in the air fryer at 400 F for 20 minutes, flipping every five minutes. After 10 minutes, add your vegetables to the mixture.
Notes
Soaking in water is optional. If you choose to skip it, still be sure to pat any excess moisture from your potatoes before tossing them with the oil and seasoning.Do not add vegetables at the start of the cooking time, they will overcook and shrivel.Air fryer cook temps vary depending on your air fryer.
