Pressure cook the potatoes on high for 3 minutes and then do a quick release of the remaining pressure.
Transfer potatoes to a medium size bowl. While the potatoes are still hot add the olive, vinegar, mustard, and salt. Gently combine to minimize the potatoes from falling apart.
Let the salad cool slightly and mix in the fresh chopped chives.

The potato salad can be garnished with more chives, fresh parsley, and crumbled bacon if desired. If your potato cubes are less than 1" they could fall apart, likewise, if they're larger than 1" they might need longer to cook than the time stated in the recipe. Add variety to the recipe by changing up the type of mustard or the type of vinegar getting used. Grey Poupon and apple cider vinegar are great alternatives.
