An easy low carb chicken divan casserole that's gluten free, and a keto chicken casserole recipe too. This chicken broccoli divan makes for a quick comfort food dinner and includes a yummy curry cream sauce dressing.
1lbchicken breastscooked and chopped (or shredded)
1batch of homemade cream of chicken soup or or one can of Campbells Cream of Chicken Condensed soup
½cupmayo
½teaspooncurry powder
1 ½teaspoonlemon juicefresh
½teaspoonground sea salt
¼ground black pepper
1cupshredded cheddar cheesegrated from a block, not pre-shredded
Instructions
Preheat the oven to 350 Fahrenheit and grease a 7x11 baking pan or casserole dish.
Cook the broccoli in the microwave in a covered microwave-safe dish for 4 minutes, or until crisp tender.
In a medium-size bowl mix the condensed cream of chicken soup, mayo, curry powder, lemon juice, salt and pepper
Lay the chicken in the bottom of the baking pan and add broccoli on top of the chicken
With a spatula, carefully spread the chicken divan dressing over the top of the broccoli
Top with 1 cup of shredded cheddar
Bake for 25-30 minutes until heated through a starting to bubble
Serve immediately and enjoy!
Notes
To keep the carbs as low as possible, shred the cheese from a block instead of buying pre-shredded cheese. Campbell's cream of chicken soup can still be part of a low-carb diet but use a homemade recipe to cut back on the carbs even more.If you substitute rotisserie chicken for boiled chicken, it will taste saltier and eliminate the salt from the recipe. All curry powders can vary slightly in taste, we used McCormick's brand. Curry powder is an Indian spice, we do not recommend substituting Thai curry paste since it hasn't been tested in the recipe.
