Caprese salad is a quick and easy Italian salad that's essentially a tomato, basil, mozzarella salad with a light balsamic drizzle and seasoning. This is low carb and keto friendly with just 3 net carbs and 11 grams of protein per serving.
Slice tomatoes and cheese about ½" thick. Alternating the tomatoes and fresh mozzarella, on a round plate or platter lay them in a circular pattern, overlapping slightly.
Sprinkle with small fresh basil leaves, or cut larger basil pieces into strips and sprinkle them over the mozzarella and tomato salad.
Drizzle the top with balsamic glaze and olive oil to taste. Sprinkle with sea salt and pepper.
Serve immediately or store in the fridge covered. Enjoy!

For best results, try to get tomatoes that are the same size as your mozzarella so it displays more uniform.Some cheaper balsamic glaze brands add a little bit of sugar, if you're on a strict keto diet, you can use balsamic vinegar instead.Add the balsamic glaze or vinegar right before serving since it otherwise aborbs into the cheese and will turn it brown.You can make this salad with mini cheese balls and grape tomatoes instead of the thicker slices.
