These sugar free chocolate covered strawberries are the easiest romantic treat for Valentine's Day—or any day! Made with keto-friendly chocolate chips and simple ingredients, they’re low carb, customizable, and done in under 15 minutes.
Prep: Rinse the strawberries and pat them dry with paper towels. Be sure to dry each berry or else the melted chocolate won't stick. Cover a baking sheet with parchment paper.
Add the chocolate chips and the coconut oil to a medium-sized bowl. Melt the chocolate chips in the microwave, stirring after every 30 seconds until they're completely melted, this will take about 2-2 ½ minutes in total.
Dip the strawberries ⅔ of the way into the melted chocolate, letting the excess chocolate drip back into the bowl
As an optional step, before the chocolate hardens you can dip the chocolate strawberries in cocoa powder, sprinkles, nuts, or shredded coconut.
Lay the low carb chocolate covered strawberries on parchment paper. Once you've finished dipping all of the strawberries, put the baking pan in the fridge until the chocolate hardens for at least ½ hour.
If you want to drizzle chocolate or white chocolate over the berries, refrigerate the covered strawberries first until the chocolate hardens before drizzling the chocolate over the top. Put the decorated strawberries back in the fridge until they're ready to serve.
The chocolate dipped strawberries will keep up to 2-3 days in the fridge, but for best results eat them the same day or the next day since strawberries start to get soft quickly and the stems discolor. Go celebrate!

Any brand of sugar-free chocolate chips will work for this recipe, milk chocolate, semi sweet, or dark chocolate.
If you have chocolate left over, the melted chocolate also works great with almonds, raspberries, or other types of nuts. Or pour it into a candy mold and make chocolate candy shapes.
As a chocolate dipped strawberries variation, dip the chocolate in melted white chocolate or use white chocolate to drizzle over the top. To make pink-tinted melted chocolate, melt white chocolate and add a drop or two of red food coloring until it's the desired shade of pink you're looking for.
