Easy air fryer baby carrots in a maple brown sugar glaze makes a quick and yummy side dish. It's simple to make this sugar-free or dairy-free if you'd prefer to lighten it up!
2tablespoonbrown sugaror coconut sugar or golden monkfruit
2tablespoonmaple syrupor sugar-free option
2tablespoonbutter
¼teaspoonsea salt
Instructions
Preheat the air fryer to 380F.
Line the air fryer with parchment paper or foil.
Add the baby carrots and cook the unseasoned carrots for 10 mins. Stir or shake.
Sprinkle with brown sugar, sea salt, maple syrup, and dot with butter and combine.
Continue cooking for about 8-10 more minutes until cooked through.
Remove and transfer to a bowl. Drizzle with more maple syrup if desired, and season with additional salt to taste. Sprinkle with parsley or thyme for added color.

You can buy air fryer parchment paper rounds or squares for your air fryer model instead of cutting your own. Make sure to line the air fryer to keep the sauce from dripping through to the bottom of your unit.For a variation, you can use honey instead of maple syrup, or skip the sweetener and just add oil, herbs like dill, and salt and pepper. For a lighter recipe with no oil, skip the added fat and just use maple syrup (or honey) and brown sugar to coat the carrots.We used baby carrots but you could use thick carrot slices instead.It's easy to roast other types of vegetables in the air fryer at the same time as the baby carrots. Great options include potatoes, parsnips, sweet potatoes, broccoli, zucchini, onions, green beans, and asparagus.
