Add all of the dried spices to a small bowl and combine well. The turkey and chicken seasoning can be used as is to season your favorite poultry recipes or you can add them to a spice grinder or Magic Bullet cup to finely blend the mix.
Store the seasoning mix in a small airtight jar with a lid for 6 months. Dried seasonings will last longer than 6 months but will start to lose their potency and flavor.

Poultry seasoning can be made in two ways, by simply combining the dried spices and using it to flavor your favorite chicken or turkey recipes, OR you can combine and then grind the dried herbs in a spice grinder or blender like the finely ground store-bought seasoning is sold.
Ground rosemary cannot be purchased at most grocery stores, you'll need to first finely chop or grind whole rosemary leaves, however, if you want to make the finely ground rosemary as you'll find at the store similar to McCormick's brand or Bell's, you can just grind all ingredients after mixing them together.
You can use fresh herbs to make a poultry seasoning recipe instead of dried herbs. The ratio of fresh to dried herbs is 1 tablespoon of fresh herbs can be used for each teaspoon of dried herbs.
If you have most of the ingredients on hand but not all of them, simply leave that one ingredient out or use a similar herb. For example, to make a version without sage skip the sage and increase other herbs like the oregano and thyme. To make a poultry seasoning without nutmeg, just leave it out or swap it with all-spice, cardamon, or mace.
Instead of making homemade poultry seasoning if you're rushed for time, you can also substitute Italian seasoning or Herbs de Provence in your recipe.
